    Peanut Butter Granola and Peanut Honey Yogurt Parfait

    My 252nd recipe, "Peanut Butter Granola and Peanut Honey Yogurt Parfait" made with Jif Peanut Powder. New year is supposed to bring out the New person in you. I believe most of you folks would have made resolutions to follow in this New Year. While I am not very good at keeping up with resolutions, posting more recipes which are actually good for you is one resolution which I made this year. However, already I have swayed away a bit  on the last couple of occasions. It is now time to pull ourselves back 🙂

    I love breakfasts, since it is the most important meal of the day. When I think of breakfast dishes which are good for you, I would be always reminded of the South Indian cuisine. With dishes like idli, dosa, etc. it offers a lot of ideas for a balanced meal. If I have to move a little outside, granola and protein bars are one of my favorites. Especially, most of the times, when I am traveling, granola and protein bars are my goto breakfast / snack foods. It makes for the perfect start for your day supplying you with all wonderful things needed by your body.

    I especially love the crunchy version and how portable it can be. So it was not at all difficult for me to choose to make a peanut butter granola today. Granola can be made in a lot of flavors. Chocolate is my favorite and peanut butter is RK's favorite. Parfait may refer to a lot of dishes based on where you are located, however, this American version is a classic layering of yogurt, granola and fruits. Yogurt adds the needed creaminess that complements perfectly with the crunch from the peanut butter granola. It is a wonderful way to enjoy a delicious and guilt free breakfast.

    Growing up in India, peanuts where basically in everything. Right from chutneys to tempering in rice dishes. But peanuts are certainly not my favorite. However, it is just the opposite with RK. RK absolutely loves peanuts and he can have it in any form. Since I do not use peanuts in my dishes, RK used to rely upon a jar of peanut butter from my local supermarket to get his peanut fix. He would have it on a slice of bread along with some jam for a quick and easy PB&J sandwich.

    However, it did not last for long. When we heard that the ready made peanut butter sold in supermarkets is high in fats and sugar, we stopped purchasing it. Only recently, we first got to know about the availability of Jif Peanut Powder. RK was more than happy. Jif Peanut Powder has the same amount of protein and flavor as a traditional peanut butter, but with 85% less fat. It tasted like freshly roasted and ground peanuts without any sugar or salt. This makes it the perfect way to add delicious peanut butter flavor to dishes with less calories and sugar.

    The ingredients for this granola and parfait, was purchased on a quick visit to the Walmart neighborhood market at Farmer's Branch. If you plan to buy it from there, it was located on aisle 16 along with breads and tortillas.

    Ingredients
      

    For granola

    • 2 Cups Old Fashioned Rolled Oats
    • ¼ tsp Salt (adjust per taste)
    • ¼ Cup Jif Peanut Powder + 1 tsp
    • 2 Tbsp Oil (I used sunflower oil)
    • 2 Tbsp Honey + 1 tsp
    • 2 Tbsp Maple syrup + 1 tsp
    • ½ Cup Nuts

    For parfait

    • 2 Cups Yogurt
    • 2 Tbsp Honey
    • 1 tsp Jif Peanut Powder
    • Dried fruits - as needed

    Instructions
     

    • Preheat oven to 300 F. First add the oats, salt and ¼ cup of the peanut powder to a large mixing bowl. Gently mix until combined.

    • In a separate mixing bowl, add 2 Tbsp each of oil, honey and maple syrup. Mix well until everything is combined together.

    • Add the liquid mixture to the oats mixture and mix until the oats is completely coated. Transfer the oats mixture onto a baking sheet, spread it into a even layer.

    • Bake for about 15 mins. While the oats is baking, add the nuts to the mixing bowl. Add the 1 tsp of peanut powder, honey and maple syrup and toss until the nuts are completely coated.

    • Pull out the baking sheet from the oven after 15 mins. Add the nuts mixture to the baking sheet. Toss everything together and return it back to the oven. Bake for another 15 mins or until the oats turn slightly golden. Pull out of the oven and leave the oats to cool completely to room temperature.

    • Before serving the parfait, add the yogurt, honey and peanut butter powder to a mixing bowl. Mix well until combined.

    • In a tall glass, add a layer of yogurt, then a layer of granola, then a layer of dried fruits, again repeat the same layering.

    • Serve immediately for a delicious breakfast.

    Notes | FAQ

    - Adding the nuts separately after 15 mins, ensures that the nuts doesn't get burned while baking.
    - The granola will seem to be slightly soft immediately after pulling from the oven. It will crisp up after cooling.
    - Baking time provided is only for indication. Keep checking the granola frequently and pull it out of the oven as soon as it starts turning golden brown.
    - Left over granola can stored in a airtight container or ziplock bag and enjoyed later.
    - You can use any of your favorite nuts. I used a combination of almonds and pecans.
    - You can use any of your favorite dried fruits. I used a combination of apricots and cranberries.
    - For the quantity given, the parfait is mildly sweet. You can increase the quantity of honey or add sugar to make your granola and parfait taste more sweeter.

      Peanut powder... now I'm intrigued! I've never tried that before. The yummy recipe would be a great way to give it a first try!
