    Eggless Banana Nut Muffin

    My 19th recipe, "Eggless Banana Nut Muffins"… This is probably one of my recipes’ which is tailor made for people like me… The one thing which has kind of become my habit; buying bananas at the supermarket and then completely forgetting about it and let them overripe… Now the biggest dilemma, whether to eat the banana or throw it away… Ah, both options are not what I prefer to do, but I dint have any other option until recently when I added this wonderful Banana Nut muffin to my repertoire … These muffins taste best when made with overripe bananas… I would call these as King of muffins; I haven’t tasted any other type of muffin which is yummier… A perfect fit for the holidays as well...

    Cooking Time : 25 mins

     

    Ingredients:-

    All Purpose Flour - ¾ Cup
    Baking Soda - ½ tsp
    Baking Power - ½ tsp
    Sugar - ¼ Cup
    Chopped walnuts - ¼ Cup
    Chopped Pecans - 2 Tbsp
    Overripe Bananas - 2
    Butter (*or Vegan butter) - 1 ½ Tbsp (Melt after measuring)
    Vanilla - ½ tsp

     

    Method:-

    1) Slightly toast the walnuts and pecans separately on a dry pan. Toast for less than a minute on medium flame, just to bring out the oils. Mix all the dry ingredients (Flour, Sugar, Baking Powder and Baking Soda) together nicely in a bowl.

    2) Mash the bananas nicely in a separate bowl.

    3) Add the melted butter and vanilla to the mashed bananas and mix until combined. Now, add the dry ingredients to the banana mixture and fold them till combined. Do not over mix or beat.

    4) Add the toasted walnut pieces and combine nicely.

    6) Preheat the oven to 375 F. Line the muffin pan and fill ¾ of each cup with batter. Top off each cup with few pieces of toasted pecans.

    7) Bake it in the preheated oven for 20-25 mins until the muffins are cooked through. Check after 20 mins, by inserting a toothpick and it should come out clean. If not, bake for additional 5 mins.Let it cool down completely before enjoying.

    Notes:-

    • Do not over mix or beat the batter. You will not get soft muffins.
    • Adjust baking time according to your oven settings.
    • In case your bananas are not overripe, you can add 1 tsp additional sugar for sweetness and upto 2 Tbsp of milk for moisture.
    • You can as well use walnuts instead of pecans to top off your muffins.
