    Cinnamon Sugar Tortilla Chips with Strawberry Salsa

    My 81st recipe, "Cinnamon Sugar Tortilla Chips with Strawberry Salsa", a sweet spin on the classical chips n salsa. When I opened my fridge today morning, I saw some left over flour tortillas which I had purchased to make quesadillas yesterday. I was wondering how I could use them up. And, I always enjoy having a batch of strawberries in my refrigerator and snack on during the day. It doesn't have to be Valentine's day to enjoy sweet treats with strawberries, and I immediately decided to make a special treat with the strawberries and tortillas. Since I love tomato salsa with chips at the Mexican restaurants here, I wanted to try making a sweet version of the lovely combo.

    The strawberries replaced the tomatoes and got transformed into a lovely sweet salsa. And the tortillas transformed into something even magical, the cinnamon sugar chips which was the perfect pair for the strawberry salsa. The perfect balance of juicy, sweet and tart strawberries with the crispy, sweet and cinnamon flavored chips. The only thing I regretted after making this dish was that I just made only about 1 cup of strawberry salsa. It was so delicious that both myself and RK completed the salsa and chips in no time πŸ™‚

    Cinnamon Sugar Chips with Strawberry Salsa

    Ingredients
      

    For Strawberry Salsa

    • 10 Strawberry (diced - small pieces)
    • 1 tsp Lemon extract
    • 2 tsp Sugar
    • small pinch Salt - small pinch
    • 1 Tbsp Fresh Cilantro / Basil leaves (finely chopped)

    For Cinnamon Sugar Crisps

    • 2 2 Flour Tortilla
    • 3 tsp Sugar
    • Β½ tsp Ground Cinnamon Powder
    • 1 Tbsp Olive Oil / Melted Butter

    Instructions
     

    • First we will make the salsa. Add all ingredients mentioned under "For Strawberry Salsa" into a mixing bowl and mix nicely. Refrigerate for atleast 30 mins, so that the flavors are well combined and the juices are released from the strawberry.

    • While the strawberries are sitting in the fridge, preheat oven to 400 F. Combine the sugar and cinnamon powder together in a mixing bowl. Mix until nicely combined.

    • Chop the tortillas into small sized pieces. Brush both sides of the tortilla pieces with oil or melted butter and arrange on a baking sheet.

    • Sprinkle the cinnamon sugar on the tortillas. Turn them over on the baking sheet.

    • Sprinkle the cinnamon sugar on the other side of the tortilla as well.Bake in the oven for 5-6 mins or until the tortilla turns golden brown. Leave it to cool down at room temperature.

    Notes | FAQ

    - Adding cilantro to the salsa is purely optional. It would give the salsa a nice and fresh herb flavor. - Adjust the Sugar and Lemon extract quantity according to the sweetness and size of the strawberries being used. - Take care not to burn the tortillas else they would taste bitter. - You can even enjoy this dish along with a scoop of vanilla ice cream.

      Easy, yummy recipe. However I would start with maybe half a teaspoon of lemon extract. Tablespoon with 40 strawberries was still overpowering.

        Thanks Nina. Maybe my strawberries were sweeter that I didn't feel the lemon overpowering. I have updated the recipe to use 1 tsp lemon extract instead of 1 Tbsp lemon extract. However since I added 1 Tbsp, people can anyways add more if they feel like.
