    My 333rd recipe, "Vegetable Noodles," is a simple, colorful, and kid-friendly noodle dish loaded with fresh vegetables and tossed in a flavorful homemade sauce. Soft noodles, crunchy vegetables, and just the right amount of seasoning come together to create a meal that both kids and adults will enjoy.

    Growing up, I was never one of those kids who had a special fondness for instant noodles. While many of my friends loved them, I could happily skip them without a second thought. Things changed when I became a parent! My kids absolutely love noodles and would happily eat them every week. In fact, they would probably stage a small protest if I skipped noodle night for too long.

    I started making this recipe purely because of their love for noodles, but over time it became a family favorite. I fill it with colorful vegetables, toss everything in a flavorful sauce, and cook the noodles soft just the way my kids like them. Since I control the ingredients, I can easily adjust the spice level to suit everyone at the table. That flexibility makes these noodles perfect for families with different taste preferences.

    Another reason I make these noodles so often is their versatility. I can use whatever vegetables I have in the refrigerator and turn them into a satisfying meal in no time. Carrots, cabbage, beans, bell peppers, and spring onions add plenty of color, texture, and flavor while making the dish more wholesome. Best of all, my kids happily enjoy all those vegetables when they come wrapped in a bowl of their favorite noodles.

    Ingredients
      

    For the Noodles

    • 300 g noodles
    • 6 tbsp sesame oil divided
    • Salt to taste

    Vegetables

    • 2 medium carrots julienned
    • 10 beans thinly sliced
    • ½ red capsicum / bell peppers julienned
    • 3 cups cabbage shredded
    • 6 spring onions white and green parts separated and chopped
    • 3 garlic cloves finely chopped
    • ½ inch ginger julienned

    Seasonings & Sauces

    • ½ tsp sugar
    • 1 tbsp soy sauce
    • 1 tbsp ketchup
    • 1 tsp red chili sauce
    • ¼ tsp black pepper powder
    • ¼ tsp red chili flakes
    • 1 tsp vinegar

    Instructions
     

    • Bring a large pot of water to a boil. Add 1 tbsp oil and a little salt. Add the noodles and cook according to package instructions until just cooked.
    • Drain the noodles and rinse under cold water to stop the cooking process. Drizzle 1 tbsp oil over the noodles and toss gently to prevent sticking. Set aside.
    • Heat a wok or large pan over high heat. Add the remaining 4 tbsp oil. Add the garlic and ginger. Sauté for a few seconds until fragrant.
    • Add the white part of the spring onions and stir-fry briefly.
    • Add the carrots and beans. Stir-fry for 1 to 2 minutes. Add the sugar and mix well. This helps the vegetables retain their vibrant color.
    • Add the cabbage and toss on high heat for a minute, keeping the vegetables slightly crisp.
    • Add the capsicum and stir-fry for another minute.
    • Add the soy sauce, ketchup, red chili sauce, vinegar, black pepper powder, red chili flakes, and salt. Mix well until everything is combined.
    • Add the cooked noodles and toss gently until the noodles are evenly coated with the sauces and vegetables. Finally add the green part of the spring onions,
    • Serve hot.

    Notes | FAQ

    • Do not overcook the noodles.
    • Rinsing the cooked noodles under cold water helps stop the cooking process and prevents them from becoming mushy.
    • Tossing the noodles with a little oil after draining keeps them from sticking together.
    • Cook the vegetables on high heat to retain their crunch, color, and freshness.
    • Also follow the sequence while adding the veggies to make sure they dont overcook
    • Feel free to adjust the spice level by increasing or decreasing the red chili sauce and chili flakes.
