My 31st recipe, “Vegan Omelette (Spanish Style)”, a quick and easy dish perfect for a lazy Sunday breakfast. I was thinking long and hard today morning, trying to decide on what breakfast to prepare. Though the bright sunny day was urging me to cook something delicious for breakfast, the usual Sunday morning laziness was holding me back tight. Finally the overwhelming thought of preparing and enjoying this omelette within a short time, gave me the needed boost. It is something you can prepare in less than 15 mins; and sit down and enjoy with your family along with a hot cup of coffee.

Ingredients:-
Besan Flour | - | 1 Cup | |
All purpose flour | - | 1 heaping Tbsp | |
Asafoetida | - | 1 large pinch (optional) | |
Green Chilli | - | ½ (Finely chopped) | |
Grape Tomatoes | - | 5 (Halved) (or) ½ Small Regular Tomato | |
Spinach | - | 10 leaves | |
Salt | - | As Needed | |
Water | - | 1 Cup | |
Oil | - | 1 tsp | |
Jeera | - | ½ tsp (optional) | |
Mint | - | 1 leaf (finely chopped) | |
Coriander Leaves | - | 10 (finely chopped) |
Method:-
1) | First, mix the besan flour, all purpose flour, salt, asafoetida and water nicely. Beat until the mixture is foamy and there are no lumps. | |
2) | Heat a small pan with oil, add the jeera and onions and saute for a few minutes until translucent. | |
3) | Add the spinach and saute until it wilts down. | |
4) | Reduce the flame to medium-low, add the green chillis, tomatoes, herbs (coriander, mint). Give a quick mix and spread them evenly on the bottom of the pan. | |
)7 | Pour the beaten mixture into the pan. Cook covered in medium-low flame for 5-10 mins, based on the thickness of the omelette and size of the pan. After 5-10 mins, flip the omelette (* Refer to notes), and cook for another 5 mins, until cooked through. A toothpick inserted in the middle should come out clean. | |
6) | Enjoy hot. | |
Notes:-
• | Instead of coriander and mint, you can use any fresh herbs. | |
• | You can add potatoes and other veggies as well to the omelette. Add them along with the onions. | |
• | For flipping the omelette, place a flat plate on top of the pan. Now invert the pan upside down. Now slowly slide the omelette from the plate to the pan. | |
• | If you need an Indian Style omelette, after step 4, add the sauteed veggies to the batter and mix nicely. Pour on a hot tawa and make thin Indian style omelette. |
