    New Year Eve Special : Paneer Tikka Kabab

    My 27th recipe, “Paneer Tikka Kabab”, finger food at its best. Hope everyone is getting ready to welcome the New year with a bang. There is no better way to celebrate than with good food. This paneer tikka kababs are quick to assemble and perfect for your New Year Eve party platter. I have tasted paneer tikka masala as an accompaniment with naan on multiple occasions, but this kabab was something new to me. I tried it once in a restaurant here and the sublime tandoori flavors had me hooked up instantly. I had tried this a couple of times in my kitchen and the pleasant aromas from the spices makes the whole house smell wonderful 🙂

    Serves : 6
    Total Time : 40 mins
    Preparation Time : 10 minutes (Excluding 2 hrs marination time)
    Cooking Time : 30 minutes

    Ingredients:-

    Thick curd/ Hung curd - 1 Cup
    Garlic - 1 Tbsp (grated)
    Ginger - 1 Tbsp (grated)
    Lime juice - 1 Tbsp
    Oil - 1 Tbsp
    Red chilli powder - 2 tsp
    Garam masala powder - 2 tsp
    Ground pepper - 1 tsp
    Coriander powder - ½ tsp
    Jeera powder - ½ tsp
    Turmeric Powder - ½ tsp
    Chaat powder - ¼ tsp
    Salt - 1 tsp
    Paneer/ Cottage cheese - 400gms
    Capsicum - 1 large
    Onion - 1 large
    Cherry/Grape tomatoes - 20
    Method:-

    1) First Chop the paneer and veggies (except cherry tomatoes) into large cubes. In a wide mixing bowl take the curd and whisk it with out any lumps.
    2) Now add all the powders listed under ingredients starting from red chilli powder to salt and mix well. Follow it by lime juice, oil, ginger, garlic and mix well. Make sure all the ingredients are mixed evenly without any lumps.

    3) Now add the chopped paneer and veggies (except cherry tomatoes) to the prepared marination mixture and mix them thereby the mixture gets coated over paneer and veggie cubes. Let them marinate in refrigerator for minimum 2 hrs.

    4) After the marination time, arrange the paneer and veggies on the skewer. Brush/Spray/drizzle oil on top of the paneer and veggies. Preheat the oven to 375 F. Bake in oven for 20-25 mins, until the edges of the paneer start to get dark.

    6) Enjoy hot.

    Notes:-

    • You can leave the paneer to marinate overnight.
    • When baking, keep rotating the skewer once every 5 mins, to ensure even cooking.
    • Alternatively, you can shallow fry or grill the paneer and veggies on a tawa. Baking on a tray has worked best for me.
    • Do not overcook the paneer. It will turn rubbery.
    • If you are using wooden skewers like me, soak it in water for atleast 1 hr before using. It helps with the skewer not getting burnt.
    • Hung Curd - If your regular curd is thin, use a clean muslin cloth to remove the excess water from the curd by keeping it suspended for a while.
    • If you do not find grape or cherry tomatoes, use large pieces of regular tomatoes.
