Preheat oven to 300 F. First add the oats, salt and ¼ cup of the peanut powder to a large mixing bowl. Gently mix until combined.

In a separate mixing bowl, add 2 Tbsp each of oil, honey and maple syrup. Mix well until everything is combined together.

Add the liquid mixture to the oats mixture and mix until the oats is completely coated. Transfer the oats mixture onto a baking sheet, spread it into a even layer.

Bake for about 15 mins. While the oats is baking, add the nuts to the mixing bowl. Add the 1 tsp of peanut powder, honey and maple syrup and toss until the nuts are completely coated.

Pull out the baking sheet from the oven after 15 mins. Add the nuts mixture to the baking sheet. Toss everything together and return it back to the oven. Bake for another 15 mins or until the oats turn slightly golden. Pull out of the oven and leave the oats to cool completely to room temperature.

Before serving the parfait, add the yogurt, honey and peanut butter powder to a mixing bowl. Mix well until combined.

In a tall glass, add a layer of yogurt, then a layer of granola, then a layer of dried fruits, again repeat the same layering.
