    Vegan Strawberry Mango Smoothie Bowl

    My 262nd recipe, "Vegan Strawberry Mango Smoothie Bowl", a super easy to make breakfast bowl. Since it is just over a month after the New Year, just wanted to check with you to see how you are faring with your New year resolutions. I am pretty sure that bringing out a New You in this New Year would have been one of the top resolutions you had made. I had wanted to reduce my consumption of fried foods and eat more whole fruits and veggies. I am so far doing fairly well sticking to that. Hope that easy recipes like this Strawberry Mango Smoothie Bowl helps you too, keeping up with your resolutions throughout the year.

    RK loves most of the veggies available at the supermarket and I don't have any trouble incorporating into his diet. However when it comes to fruits, he is not so fond of them. Whenever I buy fruits from the supermarket, after having my fair share the remaining fruits would be just sitting in the refrigerator. Only recently I found the secret of making RK eat those fruits. When made into a smoothie, he doesn't have any qualms with the fruits.

    Hence these days I turn most of my favorite fruits into delicious smoothies and serve it in a bowl for breakfast. With strawberry and mango being two of my favorites, at most times it becomes difficult to choose between one. Hence I started making myself a combo of those two flavors served in the form of this strawberry mango smoothie bowl. This recipe is so flexible and each one can add their own choice of toppings, making this strawberry mango smoothie bowl fun and favorite for the whole family.

    I believe I have already mentioned that I am moving toward Lactose free milk for obvious reasons. While there are many milks available in the market, none is as delicious as the Silk Almond Unsweetened Vanilla Milk. Being made from almonds the milk itself is naturally dairy free and lactose free. I love the natural creaminess of the milk and the slight hint of vanilla flavor. I love using this milk with my breakfast cereals and while baking. And my other favorite product from Silk is the Silk Non Dairy Yogurt.

    With small specks of vanilla bean in the yogurt, it makes the perfect ingredient for making smoothies, eggless baking and glazes. I purchased the Silk Almond Milk and Silk Non Dairy Yogurt from my nearby Walmart supermarket, along with the fruits needed. In case you plan to visit the Walmart @ MacArthur marketplace both the milk and yogurt can be found at the way end of the store along with other yogurt and dairy products.

    Vegan Strawberry Mango Smoothie Bowl

    Ingredients
      

    For strawberry smoothie

    • 2 Cups Strawberry (chopped)
    • 2 packs Silk Non Dairy Yogurt (Vanilla) - about 1 Cup
    • 1 tsp Chia Seeds (optional)
    • Maple syrup - as per taste

    For mango smoothie

    • ¼ Cup Silk Almond Unsweetened Vanilla Milk
    • a pinch Saffron
    • 2 Cups Mango (chopped)
    • 2 packs Silk Non Dairy Yogurt (Vanilla) - about 1 Cup
    • Maple syrup - as per taste

    For topping

    • Mango slices - as needed
    • Strawberry slices - as needed
    • Dried cranberries - as needed
    • Chia seeds - as needed

    Instructions
     

    • First, add the saffron to the almond milk and leave it to soak.

    • Then add all the ingredients listed under "For strawberry smoothie" to a mixie/blender. Blend until smooth. Transfer to a serving jar.

    • Then wash the blender and add the saffron milk mix. Add the remaining ingredients listed under "For mango smoothie" to the blender. Blend until smooth. Transfer to a serving jar.

    • To get the two tone effect, pour both the smoothies to the serving bowl at the same time from opposite sides. Enjoy with your choice of toppings. I used mango and strawberry slices, chia seeds and dried cranberries.

    Notes | FAQ

    - I used fresh fruits for the smoothie. You can also use frozen fruits.
    - Adjust the quantity of maple syrup based on taste preference and sweetness of your fruits.
    - Chia seeds are a good source of omega-3. In case you can't find chia seeds, you can skip.
