Masala Bread Sandwich (South Indian Bakery-Style )

A crispy, flavorful sandwich filled with a colorful mixture of cabbage, carrots, bell peppers, onions, tomatoes, and aromatic Indian spices. Inspired by the vegetable sandwiches sold in South Indian bakeries, it is quick to prepare, easy to eat, and perfect for breakfast, an evening snack, or a kids’ lunchbox.

Ingredients
  

  • 10 slices bread
  • ¼ cup butter softened, or vegan butter as needed
  • 1 tablespoon oil
  • ¼ teaspoon mustard seeds
  • ½ teaspoon cumin seeds
  • ½ large onion finely chopped
  • ½ large tomato finely chopped
  • 2 garlic cloves grated
  • 1 green chilli finely chopped
  • 2 carrots grated
  • ½ bell pepper finely chopped
  • ½ cup cabbage finely shredded
  • ½ teaspoon Kashmiri chilli powder
  • ½ teaspoon garam masala
  • 1 teaspoon coriander powder
  • ¼ teaspoon turmeric powder
  • tablespoons tomato ketchup
  • Salt as needed
  • Finely chopped cilantro as needed

Instructions
 

  • Heat the oil in a wide pan over medium heat. Add the mustard seeds and allow them to splutter. Add the cumin seeds and let them sizzle for a few seconds.
  • Add the grated garlic and chopped green chilli. Sauté briefly until aromatic, taking care not to brown the garlic.
  • Add the finely chopped onion and sauté until it turns translucent.
  • Add the chopped tomato and cook until it becomes soft and slightly mushy.
  • Add the salt, Kashmiri chilli powder, garam masala, coriander powder, and turmeric powder. Mix well and cook for about 30 seconds.
  • Add approximately ¼ cup water and stir well. Cook until the raw smell of the spices disappears and the mixture becomes almost dry.
  • Increase the heat to high. Add the grated carrot, shredded cabbage, and chopped bell pepper one after another, stirring quickly after each addition.
  • Stir-fry the vegetables over high heat until they are lightly cooked but still retain a little bite. Do not overcook them or allow the mixture to become watery.
  • Add the tomato ketchup and mix until it evenly coats the vegetables.
  • Add the chopped cilantro, mix well, and turn off the heat. Let the masala filling cool slightly.
  • Heat a skillet over low-medium heat. Spread softened butter on one side of each slice of bread. Place the bread slice on the skillet with its buttered side facing down.
  • Spread a generous layer of the prepared vegetable masala over the bread, leaving a small border around the edges. Cover it with another bread slice, keeping the buttered side facing upward.
  • Toast the sandwich until the bottom becomes crisp and golden brown. Carefully flip it and toast the other side, pressing gently with a spatula.
  • Remove the sandwich from the skillet, slice it into halves or triangles, and serve warm.

  • Use soft white, wheat, or sandwich bread based on your preference.
  • The vegetable mixture should be fairly dry before it is added to the bread. A wet filling can make the sandwich soggy.
  • Cook the vegetables briefly over high heat so they retain their color and texture.
  • Adjust the green chilli and chilli powder when preparing the sandwich for children.
  • Kashmiri chilli powder adds color and mild heat. It can be reduced or omitted for a very mild sandwich.
  • Allow the filling to cool slightly before assembling the sandwiches.
  • For a vegan sandwich, replace regular butter with vegan butter or brush the bread lightly with oil.
  • The prepared filling can be refrigerated in an airtight container for up to two days.
  • Finely chop or grate all the vegetables so the filling stays neatly inside the sandwich. Larger vegetable pieces can make the sandwich difficult for children to eat.
  • Use a wide pan and cook the vegetables over high heat. This helps excess moisture evaporate quickly and prevents the vegetables from becoming soft and watery.
  • For lunchboxes, let the toasted sandwich cool for a few minutes before packing it. Packing it while it is very hot can create steam and soften the bread.
