Peanut Butter Granola and Peanut Honey Yogurt Parfait

Ingredients
  

For granola

  • 2 Cups Old Fashioned Rolled Oats
  • ¼ tsp Salt (adjust per taste)
  • ¼ Cup Jif Peanut Powder + 1 tsp
  • 2 Tbsp Oil (I used sunflower oil)
  • 2 Tbsp Honey + 1 tsp
  • 2 Tbsp Maple syrup + 1 tsp
  • ½ Cup Nuts

For parfait

  • 2 Cups Yogurt
  • 2 Tbsp Honey
  • 1 tsp Jif Peanut Powder
  • Dried fruits - as needed

Instructions
 

  • Preheat oven to 300 F. First add the oats, salt and ¼ cup of the peanut powder to a large mixing bowl. Gently mix until combined.

  • In a separate mixing bowl, add 2 Tbsp each of oil, honey and maple syrup. Mix well until everything is combined together.

  • Add the liquid mixture to the oats mixture and mix until the oats is completely coated. Transfer the oats mixture onto a baking sheet, spread it into a even layer.

  • Bake for about 15 mins. While the oats is baking, add the nuts to the mixing bowl. Add the 1 tsp of peanut powder, honey and maple syrup and toss until the nuts are completely coated.

  • Pull out the baking sheet from the oven after 15 mins. Add the nuts mixture to the baking sheet. Toss everything together and return it back to the oven. Bake for another 15 mins or until the oats turn slightly golden. Pull out of the oven and leave the oats to cool completely to room temperature.

  • Before serving the parfait, add the yogurt, honey and peanut butter powder to a mixing bowl. Mix well until combined.

  • In a tall glass, add a layer of yogurt, then a layer of granola, then a layer of dried fruits, again repeat the same layering.

Notes | FAQ

- Adding the nuts separately after 15 mins, ensures that the nuts doesn't get burned while baking.
- The granola will seem to be slightly soft immediately after pulling from the oven. It will crisp up after cooling.
- Baking time provided is only for indication. Keep checking the granola frequently and pull it out of the oven as soon as it starts turning golden brown.
- Left over granola can stored in a airtight container or ziplock bag and enjoyed later.
- You can use any of your favorite nuts. I used a combination of almonds and pecans.
- You can use any of your favorite dried fruits. I used a combination of apricots and cranberries.
- For the quantity given, the parfait is mildly sweet. You can increase the quantity of honey or add sugar to make your granola and parfait taste more sweeter.
