Cilantro Lime Rice is an easy and flavorful Mexican style rice. The tang from lime and herby freshness from the cilantro makes this perfectly delicious.
First soak the basmati rice for 10 mins. Also, zest and juice the lime and keep aside. Heat a pressure cooker pan and add the butter. Once melted, add the basmati rice and saute for 2 mins, until a nice aroma arises.
Add the lime zest, lime juice, salt, ½ the quantity of cilantro and mix well.
Add the water, mix well and close the lid of the pressure cooker and cook for 1 whistle or until done.
Wait until the pressure subsides. Open the lid of the cooker, add the remaining ½ of the cilantro and mix well.
Serve hot.

- Take care while zesting the lime. Zest only the green portion. If you zest and add the white portion, the rice will turn bitter.- Ratio for cooking rice is 1:1 for rice:liquid. So for 1 Cup rice, you need to add water + lime juice = 1 Cup.- Pressure cooking time depends on your stove settings.- In case you do not have a pressure cooker, you can use a large pan and cook the rice covered. However this will take longer.
