Garlic Parmesan Pasta

Ingredients
  

  • Olive Oil - 1 Tbsp
  • Garlic cloves - 4 minced
  • Green Peas - 1 Small handful
  • Water - 2 Cups
  • Milk - 1 Cup + add more if needed refer to notes
  • Salt - ½ tsp adjust per taste
  • Freshly ground black pepper - ½ tsp adjust per taste
  • Pasta - 2 Cups
  • Grated Parmesan Cheese - ¼ Cup
  • Parsley leaves Coriander leaves - 1 Tbsp (finely chopped)
  • Basil leaves - 1 Tbsp finely chopped

Instructions
 

  • Heat the oil in a large pan. Add in the minced garlic and saute for 30 secs. Then add in the green peas and saute for 30 more secs.

  • Add the water, milk, salt, ground pepper and mix well. Let the mixture come to a boil.

  • Now turn down the flame to medium and add the pasta. Mix well and leave it to cook until the pasta is fully done. It took me about 17 mins.

  • Turn off the flame. Add the parmesan cheese, parsley and basil and mix well until everything is well combined and the cheese is coated over the pasta.

  • Serve warm with an optional topping of cheese and herbs.

Notes | FAQ

- I have used penne pasta for the recipe. You can use pasta of your choice.
- Cooking time of pasta will depend on the type of pasta used and the size of your pan.
- Since we are cooking the pasta in medium flame and in milk + water mixture it would take significantly more time to cook, compared to what is listed on the pasta packet.
- If the liquid in the pan evaporates before the pasta is fully cooked, add some extra warm water and continue to cook the pasta.
- By the time the pasta is cooked, if you feel the sauce has become too thick, add a little more milk to thin out the sauce. I added about ¼ Cup of extra milk.
- If you are Vegan, you can substitute with non-Dairy milk and vegan parmesan cheese. However taste and flavor would vary accordingly.
