Carrot Ginger Soup

Ingredients
  

  • Butter / Olive Oil - 1 Tbsp
  • Onion - 1 small Chopped
  • Ginger - 1 inch piece chopped
  • Carrot - 3 large chopped
  • Salt - as needed
  • Pepper - as needed
  • Water - 3 Cups
  • Mint - 2 leaves
  • Nutmeg powder - 1 pinch

For garnish (Optional)

  • Sour Cream / Yogurt - 1 Tbsp
  • Roasted Pepitas - 1 Tbsp

Instructions
 

  • First, melt the butter in a pan. Add the onion and ginger and saute for a few minutes until the onion turns translucent.

  • Add the carrots and saute for 1 min.

  • Add the salt, pepper, water and cook until the carrots are done. It took me about 20 mins in medium flame.

  • Cool the carrot and let it come to room temperature. Transfer to a mixie and grind the carrots along with mint and nutmeg powder. Transfer the soup back to the pan and heat in high flame for 1 min until the soup becomes hot enough.

  • Enjoy hot. Optionally garnish with sour cream / yogurt and pepitas.

Notes | FAQ

- If you like your soup creamier, add about ΒΌ cup of fresh cream while reheating the soup after grinding.
- For enhanced taste, you can also add 1 small sized potato (chopped) along with the carrots.
- You can even add a little lemon juice or honey to give a extra zing to the soup.
- Do not grind soup to very fine paste. It would taste good if it is slightly coarse.
- Adjust water quantity per your desired thickness for the soup.
