First, add the softened butter and sugar to a mixing bowl. Using a hand whisk, beat the butter until light and fluffy.
Meanwhile, in a separate bowl, add the oil, water and baking powder and mix well. Add this mixture to the butter. Also, add the vanilla extract and salt. Use the hand whisk until all the ingredients have mixed well and the mixture is light and fluffy.
Now, add the flour little by little and mix well until the dough is ready. You can use the hand whisk at the beginning and as you add more and more flour, you can switch to a ladle/spoon.
Cut the candied cherry into halves and keep aside.
Preheat the oven to 350 F. Now take about 1 ¼ Tbsp of the dough and roll it into a smooth ball using your palm. Place it on a greased baking pan. Leave a space of about 1 inch between each cookie dough. Gently press on top of the cookie dough with your finger to get a depression.
Place one half of the candied cherry on top of the cookie and gently press.
Bake in the pre heated oven for about 10 - 12 mins, until done. Remove the cookies from the oven and leave them to cool to room temperature.
